Keto Buko Pandan Chia Pudding
Buko pandan is my all-time favorite Filipino dessert. It’s sweet, creamy, and coconut-y and gets its green color from pandan leaves. It’s usually made with sweetened condensed milk and tapioca pearls, which are not keto friendly. Chia seeds are an excellent low carb replacement for tapioca pearls.

Preparation
- In a bowl or mason jar, stir together coconut milk, chia seeds, erythritol or monkfruit sweetener, pandan extract, and salt.
- Cover bowl or mason jar and let sit in the fridge overnight.
- When ready to eat, top with coconut flakes and macadamia nuts. Enjoy!
