Berry Almond Cake

This cake is a riff on The Violet Bakery’s spelt cake. It’s incredibly easy, delicious, and adaptable. You can substitute with any type of flour and any type of fruit.

Preparation

  1. Preheat oven to 325 degrees.
  2. In a large bowl, cream together butter, flour, brown sugar, salt, and baking powder. Add eggs and almond extract and mix until combined.
  3. In a greased 10-12” cake/tart/pie pan, add the batter and spread to the edges.
  4. Scatter and press down almonds and berries onto the top of the cake.
  5. Bake for 1 hour. Let cool and enjoy!
