Berry Almond Cake
This cake is a riff on The Violet Bakery’s spelt cake. It’s incredibly easy, delicious, and adaptable. You can substitute with any type of flour and any type of fruit.

Berry Almond Cake

Preparation
- Preheat oven to 325 degrees.
- In a large bowl, cream together butter, flour, brown sugar, salt, and baking powder. Add eggs and almond extract and mix until combined.
- In a greased 10-12” cake/tart/pie pan, add the batter and spread to the edges.
- Scatter and press down almonds and berries onto the top of the cake.
- Bake for 1 hour. Let cool and enjoy!
