Chicken Adobo Wings

Preparation
- Turn on your instant pot and set to sauté for 4 minutes. Dump the olive oil and garlic in the pot and sauté until timer goes off.
- Place chicken, bayleaves, coconut aminos, and vinegar in the pot. Pour enough water just to cover the tops of the chicken. Gently mix together.
- Set instant pot to pressure cook for 12 minutes. At the end of the 12 minutes, release the steam with the venting valve (use a towel to protect yourself).
- Turn on oven and set to broil (high). Place the rack on the sheet pan. Take the chicken out of the pot and place onto the rack. The chicken should be super tender at this point so be gentle! You can enjoy them at this point, but if you want to crisp them up, keep going.
- Place chicken in the oven and set timer for 10 minutes.
- In the meantime, set instant pot to sauté again for 10 minutes, stirring occasionally
- After the timers are done, take chicken out of the oven and spoon over some of the liquid from the instant pot.
- Enjoy with either bok choy or cauliflower rice or both!
