My Mom’s Pork Adobo
Out of everything my mom cooks, this, by far, is her go-to. I grew up on this. She still makes this almost every week. What makes her adobo special: she uses a 2:1 ratio of balsamic vinegar to soy sauce. The result is a sauce that is slightly sweet and thick. It’s so good. This tastes even better the next day. Preparation
- In a large pot on medium high heat, add all ingredients.
- Add enough water to cover the top of the pork.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for at least 1.5 hours or until pork is tender and most of the liquid has evaporated.
- Easy peasy! Enjoy with rice!
