Good Fortune Microwave Steamed Fish

I first saw this fish recipe on chef Lucas Sin’s Instagram and was immediately shocked at how flakey and perfectly cooked the fish becomes after just 8 minutes in the microwave . For Lunar New Year, eating whole fish is meant to symbolize prosperity and abundance. So microwave your fish and get your money.

Ingredients

  • Whole seabass (I got mine cleaned, gutted, and deboned at the market)

  • Salt

  • Sugar

  • Scallions, thinly sliced

  • Ginger, julienned

  • Light soy sauce

  • Fish sauce

  • Neutral oil

Preparation

  1. Prepare seabass by generously salting and sugaring the outside skin. Use about a 2:1 ratio of salt to sugar.

  2. Let fish sit for 15 minutes, then rinse with cold water.

  3. Stuff fish with some of the ginger and scallions.

  4. Place two chopsticks parallel on a plate so that they sit on the plate’s edge. Place fish on top of chopsticks.

  5. Cover completely with plastic wrap or showercap and microwave for 8 minutes.

  6. After fish is cooked, uncover plastic wrap and transfer fish onto a serving platter.

  7. In a small bowl, mix 2 tablespoons soy sauce, 1 tablespoon fish sauce, 1 tablespoon sugar, and 1 tablespoon water. Pour over cooked fish.

  8. Add the rest of the scallions and ginger to the top of the fish.

  9. Heat about 3 tablespoons of neutral oil in a sauce pan until it starts to smoke. Pour hot oil on top of fish and hear that sizzle.

  10. Eat immediately with rice. Enjoy!
