Keto Pad See Ew

Here’s a riff on one of my favorite Thai dishes using hearts of palm lasagna noodles. I adapted this recipe from The Wok’s of Life’s pad see ew recipe! To keep it vegetarian, I just used fried tofu, but feel free to swap with any protein.

  1. In a small bowl, combine oyster sauce, sweetener, coconut aminos, Thai black soy sauce, fish sauce, and white pepper. Stir to mix well and set aside.
  2. Rinse and drain hearts of palm lasagna noodles. Cut each sheet in half, lengthwise.
  3. Add oil to a wok and stir in the garlic. Immediately add broccoli/greens and stir-fry for 20 seconds (stir constantly to prevent the garlic from burning).
  4. Add tofu and hearts of palm noodles.
  5. Pour bowl of sauce in the wok and cook for 2 minutes.
  6. Push the mixture to one side to let the empty side of the wok heat for 10 seconds. Add a little bit more oil to the wok, and add the beaten eggs. Wait 5 seconds for them to begin to cook. Scramble the eggs for another few seconds, breaking them up into smaller pieces.
  7. Stir and cook for another 1-2 minutes until noodles are tender. Enjoy!
