Ingredients

Preparation

  1. Slice sausage in about 1 inch pieces.
  2. In a large heavy pot, brown sausage pieces in 1 tablespoon of oil.
  3. Remove sausage from pan and set aside.
  4. Add chicken to pot and brown.
  5. Add 1 tablespoon of creole seasoning and stir.
  6. Remove chicken from pot and set aside. Don’t worry about fully cooking the chicken before removing from the pot; it will continue cooking later.
  7. Add remaining tablespoon of oil to the pot and cook celery, bell peppers, and onion until soft.
  8. Add can of tomatoes plus one can full of water.
  9. Add remaining tablespoon of creole seasoning, oregano, garlic powder, thyme, Worcestershire sauce, and smoked paprika.
  10. Add back chicken and sausage.
  11. Stir in cauliflower rice.
  12. Cover and let simmer for about 15 minutes.
  13. Stir in shrimp and cover to cook for another 5-7 minutes.
  14. Check for seasoning. Salt and pepper to taste. Garnish with chopped parsley.
