Preparation
- Slice sausage in about 1 inch pieces.
- In a large heavy pot, brown sausage pieces in 1 tablespoon of oil.
- Remove sausage from pan and set aside.
- Add chicken to pot and brown.
- Add 1 tablespoon of creole seasoning and stir.
- Remove chicken from pot and set aside. Don’t worry about fully cooking the chicken before removing from the pot; it will continue cooking later.
- Add remaining tablespoon of oil to the pot and cook celery, bell peppers, and onion until soft.
- Add can of tomatoes plus one can full of water.
- Add remaining tablespoon of creole seasoning, oregano, garlic powder, thyme, Worcestershire sauce, and smoked paprika.
- Add back chicken and sausage.
- Stir in cauliflower rice.
- Cover and let simmer for about 15 minutes.
- Stir in shrimp and cover to cook for another 5-7 minutes.
- Check for seasoning. Salt and pepper to taste. Garnish with chopped parsley.
