Breakfast Cheese Shell Tacos with Steamed Eggs and Bacon
I’m officially part of the J. Kenji Lopez-Alt fan club of steamed boiled eggs. Steam eggs in about one inch of rapidly boiling water for about 8 minutes for the most perfect, fudgy yolks.
This is such an easy breakfast that comes together pretty quickly. It’s so simple that it’s a non-recipe recipe. Just cook the bacon in a 350 degree oven for optimal chewiness. Put a mound of shredded cheese on a silpat and baking sheet and cook in the oven until cheese is melted and just slightly crispy on the edges.
Assemble your breakfast tacos however you like. I prefer boiled eggs, but you do you. I piled in some bacon, the eggs, and some scallions in the cheese shell. Finally, I topped with some chili oil and sea salt. The cheese shell should be pliable to fold into a taco. Enjoy!
