The 175 Berry Cake

This recipe is adapted from the Violet Bakery Cookbook’s summer spelt cake. All you need to remember for this recipe is the number 175…

In a bowl, mix together 175 grams of ANY flour (all purpose or spelt works best), 175 grams of softened butter, 175 grams of brown sugar, 2 eggs, 2 teaspoons of baking powder, and 2 teaspoons of ANY extract. Top with ANY berry. Add ANY nut if you prefer too. Pour into mini tart liners or a cake pan. Bake at 375 for 30-40 minutes.
